Directions
  1. Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
  2. Add potatoes and stock. Bring to the boil.
  3. Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
  4. Blend. Season with salt and pepper.
  5. Garnish with chives.
