Potato and Leek Soup
Hearty winter soup that's very filling.
1 dash black pepper
1 dash salt
2 tbsps olive oil
6 <span class="measurestring" title="cup (8 fl oz)">cups</span> chicken stock
3 tbsps chopped chives
6 leeks, washed and chopped
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, finely chopped
8 <span class="measurestring" title="potato medium (2-1/4" to 3-1/4" dia)">medium</span> potatoes, peeled and chopped
Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
Add potatoes and stock. Bring to the boil.
Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
Blend. Season with salt and pepper.
Garnish with chives.
