A healthy version of a seasonal favorite.
1 cup egg beaters
1 tbsp pumpkin pie spice
1 tsp salt
1 cup applesauce
2 cups pumpkin
1/2 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
2 tsps baking soda
1 1/2 cups packed brown sugar
3 cups whole wheat pastry flour
Pre-heat oven to 350 °F (175 °C).
In large bowl combine flour, salt, sugar, spice and baking soda. Set aside.
In another bowl combine, applesauce, pumpkin, egg substitute and water.
Combine pumpkin mixture with dry ingredients.
Bake in loaf pan for appropriately 50-60 minutes.
If using plain whole wheat flour instead of whole wheat pastry flour, use a little less.
Note: recipe will make 2 loaves, for better portion control use muffin tins instead of loaves.
