Pumpkin is the surprise ingredient and really adds a great twist to this comfort food.
1 tbsp sour cream, reduced fat
1 cup shredded cheddar cheese, reduced fat
1 tbsp chili powder
1 tsp black pepper
1 dash salt
1 tbsp olive oil
1 lb ground turkey
1 clove garlic, minced
1 cup chopped onion
1/2 cup chopped green pepper
2 <span class="measurestring" title="cup (1" cubes)">cups</span> pumpkin puree
14 1/2 oz diced tomatoes
1/2 <span class="measurestring" title="pepper, large (3-3/4" long, 3" dia)">large</span> yellow pepper
2 cups great northern beans
Heat the oil in a large skillet over medium heat, and sauté the onion, green bell pepper, yellow bell pepper, and garlic until tender.
Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt.
Add great northern beans, drained to mixture. Reduce heat to low, cover, and simmer 20 minutes.
Serve topped with cheddar cheese and sour cream.
