Pumpkin Chocolate Chip Muffins
Delish moist muffins with coconut oil.
1/4 cup almond milk
15 oz canned pumpkin
1 cup dark chocolate chips
1 tsp ground cinnamon
1/2 cup coconut oil
1 cup sugar
4 large eggs
1 large egg white
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
1 1/2 tsps baking powder
1 tsp baking soda
1/4 cup packed brown sugar
3 cups all purpose flour
Preheat the oven to 350 °F (175 °C). Grease and flour muffin pan or use paper liners.
Mix sugars, oil and eggs. Add pumpkin, milk and water.
In separate bowl mix together the flour, baking soda, baking powder, spices and salt.
Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes.
