Raspberry Cheesecake Squares
These low carb cheesecake squares are very good.
2 3/4 <span class="measurestring" title="package, small (3 oz)">packages, small</span> cream cheese
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> boiling water
1 <span class="measurestring" title="package (0.35 oz)">package</span> raspberry gelatin, sugar free
Sprinkle gelatin into boiling water.
Stir until well dissolved.
In bowl, beat cream cheese until very creamy.
With mixer running, add geltin,1/4 cup at a time.
Mix until thoroughly combined.
Pour into 8x8" pan, refrigerate until firm, about 2 hours.
Cut into squares and serve.
