Red Cabbage Meatloaf
Lean beef meatloaf studded with red cabbage and onions.

2 lbs lean ground beef
6 tbsps ground flax
1 tsp dry mustard
2 large eggs, beaten
1 cup yellow onion, chopped
1 tsp sea salt
2 tsps chili powder
1 tsp garlic
1 tsp ground pepper
1/2 tsp sage
2 cups red cabbage, chopped
Preheat oven to 350 °F (175 °C).
In a large skillet, cook the red cabbage and onions until just soft.
In a large bowl, combine all ingredients.
Shape into a loaf on a non-greased baking dish.
Bake uncovered for 75 minutes or until an internal temperature of 160 degrees is reached.
Let rest for 5 minutes before slicing and serving.
