Rice Pudding II
Grandma's rice pudding is surely a family favorite.
1/4 cup sugar
2 large eggs
1 cup skim milk
1 tsp cinnamon
1 tsp vanilla
2 tbsps margarine
1/2 cup rice
Beat eggs, add sugar to taste, and vanilla. Add scalded milk.
Put a tablespoon of margarine (or butter)into casserole, melt in oven.
Pour in rice and egg mixture. Should be quite soupy.
Add second tablespoon of margarine, sprinkle with cinnamon and sugar mix.
Bake for 20-30 minutes until knife comes out clean.
Serve with a little milk and additional cinnamon/sugar mix if needed.
