Roasted Cauliflower with Parmesan and Almonds
Tasty dish that offers a change from classic cauliflower cheese.
1 <span class="measurestring" title="head, large (6-7" dia)">head large</span> cauliflower, cut into florets
1/2 <span class="measurestring" title="cup (not packed)">cup</span> golden raisins
1/2 fresh lemon's juice
1/2 <span class="measurestring" title="oz (22 whole kernels)">oz</span> sliced almonds
1/3 cup bread crumbs
2 tsps extra virgin olive oil
2 tbsps grated parmesan cheese
2/3 second olive oil cooking spray
Pre-heat oven to 400° F (200° C).
Cover roasting pan with foil and spray with olive oil cooking spray.
Steam cauliflower for about 5 minutes until crisp-tender. Transfer cauliflower to roasting pan.
Stir together raisins, breadcrumbs, parmesan, almonds and oil in a medium bowl.
Sprinkle breadcrumb mixture over cauliflower.
Roast until crumbs are toasted, about 20 minutes.
Drizzle lemon juice over top and roast 5 minutes longer.
Serve hot or at room temperature.
