Sausage & Egg Muffins
Convenient portable breakfast in a cup.
6 large egg whites
6 oz turkey sausage
2 cloves garlic, minced
1/2 cup chopped onion
3 cups diced potatoes
Brown turkey sausage in non-stick pan. Shred potatoes and brown with onions and garlic.
Mix egg whites, sausage and potatoes and dish into 6 non-stick muffin cups.
Bake at 350 °F (175 °C) oven for 20 minutes.
Save extra servings in fridge and microwave for 30 seconds on high.
