Sausage Gumbo
A spicy sausage and veggie dish.

Ingredients
Directions
  1. Sauté chopped onion and sliced celery until nearly done.
  2. Add pepper pieces and continue cooking for several minutes.
  3. Add sausage and diced tomatoes. Add tomato sauce and vegetable juice (like V-8). Simmer for 15 to 20 minutes.
  4. Serve over spaghetti squash.
  5. Note: canned kidney beans are optional but do add a great deal of flavor.
