1/3 cup chopped onion
3 <span class="measurestring" title="stalk, medium (7-1/2" - 8" long)">stalks medium</span> celery
1/4 cup chopped red pepper
1/4 cup chopped green pepper
6 links, 4/lb pork sausage
4 <span class="measurestring" title="small whole (2-2/5" dia)">small whole</span> tomatoes
3/4 cup vegetable juice
0.12 cup tomato sauce
0.12 tsp hot sauce
3/4 cup cubed spaghetti squash
2 tbsps olive oil
Sauté chopped onion and sliced celery until nearly done.
Add pepper pieces and continue cooking for several minutes.
Add sausage and diced tomatoes. Add tomato sauce and vegetable juice (like V-8). Simmer for 15 to 20 minutes.
Serve over spaghetti squash.
Note: canned kidney beans are optional but do add a great deal of flavor.
