Shrimp with Zucchini
This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.

  1. Heat olive oil in fry pan.
  2. Add chopped onion and minced garlic cloves. Cook until softened.
  3. Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
  4. Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
  5. Top with cheese and serve with green salad.
  6. Note: great for Phase 2 and 3 of South Beach.
