Skinny Taco Chicken Chili
Another delicious slow cooker recipe.
8 oz no tomato sauce no salt added
10.8 oz super sweet corn
15.25 oz black beans
10 oz diced tomatoes & green chilies
1.25 oz package 40% less sodium taco seasoning mix
1 1/2 lbs boneless skinless chicken breast
15.5 oz pinto beans
1 cup low sodium chicken broth
1 tbsp chili powder
Combine all ingredients (except chicken) in a slow cooker and mix well. Place chicken breasts on the top, and press them down slightly.
Cook on low for 10 hours or on high for 6 hours. 30 minutes before serving, remove chicken and shred.
Return shredded chicken to slow cooker, and mix everything together. If desired top with cilantro before serving.
