Spicy Asian Beef & Peas
Full of flavors Asian dish using fresh bell pepper, mung bean sprouts, green peas and lean beef with a taste of chili pepper, cinnamon and coconut milk.
220 g lean beef
1 <span class="measurestring" title="pepper, large (3-3/4" long, 3" dia)">large</span> sweet pepper
1/2 cup frozen green peas
1/2 cup mung bean sprouts
1/2 tsp cayenne pepper
1/2 tsp cinnamon
1/4 cup coconut milk
1 tbsp sesame seed oil
1 tsp sea salt
2 sprigs parsley or coriander
1 tbsp apple cider vinegar
1/2 cup low sodium broth
Slice beef in long strips. Put meat in a bowl, add apple vinegar and half tablespoon of oil.
Let marinate a while in a fridge (if in a hurry, give the beef at least 10 minutes, while you're preparing the other ingredients).
Cut pepper in strips.
Heat oil in a saucepan. Fry meat all over.
Add pepper and fry one more minute.
Add broth (or water if you don't want to use broth). Braise until pepper is softer, but still firm.
Add green peas and mung bean sprouts. Let cook until peas unfreeze.
