Spinach and Leek White Bean Soup with Ham
Easy to make, delicious and filling soup, that can be made vegetarian with a few substitutions.
1/2 tsp cumin
2 tsps olive oil
30 fl oz chicken broth
20 oz turkey ham
2 cloves garlic
2 cups spinach
30 oz cannellini beans
1/2 cup couscous
Heat olive oil in a large saucepan over medium heat.
Add the leeks and garlic. Sauté until tender.
Stir in the chicken broth, cannellini beans, turkey ham and cumin.
Bring to a boil, then reduce heat to low.
Stir in the couscous. Cover and simmer for 5 minutes.
Stir in spinach and season with salt and pepper.
