Stuffed Pepper Soup
Great soup that reminds you of a stuffed pepper dinner on Sunday.
1 tbsp black pepper
1 tbsp salt
2 lbs ground turkey
4 <span class="measurestring" title="cube (6 fl oz prepared)">cubes</span> beef bouillon
1 clove garlic, finely chopped
2 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
4 cups chopped green peppers
1/2 cup packed light brown sugar
1 1/2 cups brown rice, uncooked
2 lbs lean ground beef
56 oz diced tomatoes
56 oz tomato sauce
46 oz vegetable juice
In large pot, or saucepan, brown the beef and turkey. Drain.
Add remaining ingredients.
Bring to a boil, reduce heat.
Cover and simmer for 30-40 minutes, or until peppers are tender, and rice is cooked.
