Sweet and Savory Mashed Potatoes
A lovely blend of white and sweet potatoes.
3 lbs boiled white potatoes
29 oz sweet potato
8 oz low fat cream cheese
6 <span class="measurestring" title="thin slice (yield after cooking)">thin slices</span> bacon
3/4 cup sour cream
3/4 cup low sodium chicken broth
1/2 tsp pepper
2 tsps salt
Peel, dice and boil white potatoes and 1 teaspoon salt until tender. Drain.
Meanwhile drain canned sweet potatoes in syrup. Return potatoes to pan, add sweet potatoes and softened cream cheese.
Mash until smooth with a potato masher.
While potatoes are boiling, cook and crumble bacon. Add bacon and next 3 ingredients to potato mixture. Add 1-2 teaspoons of salt. Mix well.
Spoon mixture into a lightly greased 11 x 7" baking dish.
Bake uncovered at 350° F (175° C) for 20 minutes.
