Black bean salsa that's perfect for Tex-Mex burgers.
1 tbsp coriander
1/4 tsp olive oil
1/2 lime's juice
1/2 small red onion
4 <span class="measurestring" title="medium whole (2-3/5" dia)">medium whole</span> tomatoes
1/2 red hot chili
4 oz black eyed beans
Mix tomato and onion with the beans and olive oil, lime juice, coriander and chili.
Note: personally I don't like cold salsa so I cook all of this in a saucepan to soften the onion and other ingredients, but others I know say this is lovely cold.
