Thai Beef Salad with Peanuts
A quick toss together salad that's tasty and filling.
1 fl oz lime juice (2 tbsp)
1 medium cucumber, sliced
1 clove garlic, crushed
1 tsp fresh ginger, grated
1/2 head large iceberg lettuce, shredded
3 stalks green onions, sliced
1 cup chopped red bell pepper, thinly sliced
10 oz roast beef
1/2 fl oz water (1 tbsp)
1/4 cup dry roasted peanuts, chopped
Trim excess fat from beef. Cut into thin strips and place in a medium bowl.
Add lime juice, soy sauce, water, ginger, and garlic. Toss to mix.
Add green onions, cucumber, and bell pepper. Toss again. Cover and refrigerate at least 1-2 hours, or until time to serve.
Place lettuce in a salad bowl. Pour beef, vegetables, and any remaining liquid over the lettuce.
Toss together just before serving, then sprinkle peanuts over the top.
