A delish, low calorie and healthy chilled tomato based soup that's super easy and great for summer days.
5 tbsp wine vinegar
1/4 cup olive oil
1/3 cup fresh coriander
2 medium cucumbers, peeled
6 garlic cloves
12 <span class="measurestring" title="large whole (3" dia)">large whole</span> tomatoes
1 <span class="measurestring" title="large (2-1/4 per lb, approx 3-3/4" long, 3" dia)">large</span> red pepper
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
Blend all ingredients in a food processor.
Add water to reach the consistency you like. It depends on how juicy the tomatoes are, usually about a cup of water.
Chill to let the flavors blend. It's even better the next day.
Note: if you are feeling fancy serve with chopped up coriander, spring onions and/or croutons.
