3/4 cup diced tomatoes
1 2/3 cup chicken breast
1/2 tsp chili powder
2 oz brown rice
2 cups chicken broth
1 tbsp cumin
1 tbsp garlic powder
1 tbsp onion powder
2 tsps ground oregano
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onions
4 oz green chili peppers
Place chicken, diced tomatoes and chilies in a saucepan.
Chop onion and add to pan.
Add raw brown rice, seasonings and chicken broth. Cover.
Once it boils, lower to a simmer and cook for 20 minutes.
Note: cheddar cheese, sour cream or a few tortilla chips can be added for a few extra calories.
