Two Onion Delight
Chicken onion soup with cheese, shallots and chives.
1 tbsp olive oil
8 <span class="measurestring" title="cup (8 fl oz)">cups</span> chicken stock
2 tbsps chopped chives
2 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onions, sliced
2 oz shallots
1/2 cup shredded swiss cheese, low fat
Heat oil in a large saucepan over medium-high heat.
Add onions; cook 5 minutes, stirring occasionally.
Stir in 2 sliced shallots and white and light green part of leek, sliced.
Continue cooking until golden brown, about 5 minutes.
Add stock; simmer uncovered about 15 minutes.
Season with salt and pepper if desired.
Ladle into shallow bowls; garnish with cheese and chives.
