  1. Heat oil in a large saucepan over medium-high heat.
  2. Add onions; cook 5 minutes, stirring occasionally.
  3. Stir in 2 sliced shallots and white and light green part of leek, sliced.
  4. Continue cooking until golden brown, about 5 minutes.
  5. Add stock; simmer uncovered about 15 minutes.
  6. Season with salt and pepper if desired.
  7. Ladle into shallow bowls; garnish with cheese and chives.
