Vege & Black Bean Coleslaw
Crisp and fresh vegetable slaw with black beans.

Ingredients
1 1/2 cups English cucumber
1 1/2 cups carrots, sliced
1 1/2 cups black beans
3 1/2 tbsps apple cider vinegar
7 tbsps extra virgin olive oil
1 1/2 cups broccoli, chopped
1 1/2 cups cabbage, shredded
Directions
Shred or chop all vegetables and mix in a large bowl.
Drain and rinse black beans, add to vegetables.
Blend vinegar and olive oil and add to salad. Mix well.
Serve fresh or keeps well refrigerated for several days.
