Vegetable Rice Soup
An easy Fat Smash Phase 1 friendly soup that I made up tonight because I was sooo hungry.
4 tsps bouillon
3 <span class="measurestring" title="large (7-1/4" to 8-1/2" long)">large</span> carrots, cut into pennies
3 <span class="measurestring" title="stalk, medium (7-1/2" - 8" long)">stalks medium</span> celery stalks chopped
1 clove garlic, minced
14 oz diced tomatoes, undrained
5 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
16 oz red kidney beans, undrained
1 cup brown rice, cooked
Combine all ingredients except rice in pot.
Boil uncovered for 30 minutes or until carrots are softened.
Stir in rice.
