Vegetarian Boca Chili
A low fat tasty meatless chili.
1 1/2 cups meatless burger
1 3/4 cups dark red kidney beans
1 3/4 cups diced tomatoes with green chilis
2 tbsps chili powder
1 tsp cumin
2/3 second olive oil cooking spray
1/4 tsp crushed red pepper
1/2 tsp salt
1 clove garlic
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green pepper
1 tbsp tomato paste
1 1/4 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Spray cooking spray, like Pam on skillet.
Cook the onion, green pepper, and garlic until brown.
Add the rest of the ingredients and bring to a boil.
Reduce heat and simmer uncovered for 7 minutes.
