Warm Lamb Salad with Black Olives
Quick and easy to prepare.
500 g lamb fillet
1 clove garlic, crushed
1/4 cup balsamic vinegar
1/4 cup olive oil
25 g black olives, sliced
15 g butter
10 <span class="measurestring" title="spear, medium (5-1/4" to 7" long)">spears medium</span> asparagus, chopped coarsely
200 g red capsicum, chopped coarsely
150 g button mushrooms, quartered
80 g baby rocket leaves
In a large non-stick fry pan cook lamb until brown and cooked as desired.
Slice lamb and combine it with garlic, vinegar, oil and olives in a large bowl.
Heat butter in pan and cook asparagus, capsicum, mushrooms, stir until asparagus is tender.
Add to lamb mixture in the bowl and toss gently.
Serve lamb mixture with rocket.
Note: you can use lamb cutlets, chops or fillets.
