Spicy Steak Chili
A spicy, hearty steak chili with lots of beans that's very filling and budget friendly.
2 cups dry red kidney beans
1 cup dry black beans
1 cup dry white beans
1 large sweet onion, chopped
5 cloves garlic, minced
28 oz canned diced tomatoes
4 oz tomato paste
3 <span class="measurestring" title="cup (8 fl oz)">cups</span> beef broth
2 tsps garlic powder
1 tsp onion powder
2 tbsps cumin
2 tsps dried oregano
2 tbsps chili powder
1 tsp paprika
1 tsp olive oil
1 lb lean sirloin steak, cubed
Soak beans in cold water 6-8 hours or overnight, then drain and rinse.
In large soup pot over medium-high heat sauté onion and garlic in olive oil. Add cubed steak and brown.
Add spices and tomato paste and mix well. Add broth and canned tomatoes, and bring to a boil.
Turn heat to low and simmer loosely covered for 4 hours stirring occasionally until thickened and beans are tender.
Add salt and pepper to taste.
