Cool Cucumber Yogurt Soup
Cold soup for hot summer days.
1 cup nonfat plain Greek yogurt
1 sprig dill
1 tsp salt
2/3 tbsp olive oil
1/2 fl oz lemon juice
2 <span class="measurestring" title="large (8-1/4" long)">large</span> cucumbers
1/2 cup onion, chopped
Peel, seed and grate the cucumbers.
Mix all ingredients together. Blend in blender until smooth.
Chill until ready to serve.
Makes about 3 cups.
