French Onion Soup II
Very tasty and healthy soup that's low in sodium and fat.
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion
1 tsp low sodium beef broth powder
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
1/2 tbsp worcestershire sauce
1 dash black pepper
1 slice whole wheat bread
1 oz skim mozzarella cheese
1 tbsp low calorie margarine
1 sprig parsley
Sauté onions in frying pan with margarine. (Optional to add a teaspoon of sugar to onions to caramelize).
Add a teaspoon of beef broth powder to boiling water, simmer.
Add pepper, Worcestershire sauce and onions to simmering broth.
Pour broth into an oven-proof bowl, add slice of bread, top with shredded mozzarella cheese.
Broil in oven until cheese is bubbly (does not take long so check oven every minute or so).
Add fresh parsley on top of soup. Enjoy!
