Protein-Pack Oatmeal Cups
You can add chocolate chips or other toppings like nuts, blueberries, etc.
3 cups whole grain oatmeal
2 oz organic protein plant based protein powder sweet vanilla bean
1/2 tsp sea salt
2 large eggs
1/2 cup organic unsweetened apple sauce
5 oz 0% fat plain greek yogurt
1/8 cup pure maple syrup
1 cup almond breeze unsweetened vanilla milk
2 tbsp hulled hemp seed
2 tbsp raw organic coconut butter
1 <span class="measurestring" title="medium (2-3/4" dia) (approx 3 per lb)">medium</span> apple
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder (sodium aluminum sulfate, double acting)
Preheat oven to 350° F (180° C).
Chop apple into small pieces.
Mix the wet ingredients together.
Mix the dry ingredients together, then combine both with apple.
Grease cupcake pan with coconut oil, then fill each with the batter.
Bake for 15-18 minutes.
Let cool 20 minutes before eating.
