Spaghetti Squash with Turkey Meat Sauce
A surprisingly good meal that will make you forget you're dieting.
3 lbs spaghetti squash (1 medium)
1 can tomatoes
1 lb ground turkey
1/2 cup chopped white onion
2 cloves garlic
1/4 <span class="measurestring" title="cup (8 fl oz)">cup</span> chicken stock
1 cup pieces or slices fresh mushrooms
1 tbsp fennel seed
1 oz coriander
Cook squash in oven until soft. Remove from oven and use fork to make "spaghetti".
While squash is cooking in the oven, puree tomatoes. Then put into medium sauce pan with fennel and heat on low for about 20 minutes.
In a non-stick skillet, sauté garlic, onions and mushrooms until onions are soft. Then add ground turkey and coriander and cook thoroughly.
Add the ground turkey mixture to the tomato sauce pan and let simmer for another 4-5 minutes.
Put "spaghetti" on plate and pour sauce on top.
