Spinach & Lentil Soup
Homemade high fiber, super healthy lentil and spinach soup.
3 1/4 cups vegetable broth
1/4 cup olive oil
4 cups cherry tomatoes
1 tsp chili powder
2 tsps cumin seed
1 1/2 tsps paprika
11 medium celery stalks
5 cloves garlic
1 large onion
10 oz spinach
12 oz baby carrots
8 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
16 oz lentils
Saute onion, garlic, celery, and carrots in the olive oil.
Add chili powder, paprika, and cumin seeds and cook for a minute, stirring constantly.
Add lentils, water and stock and dash of salt and pepper.
Bring to a boil, cover, reduce heat and simmer for an hour.
Add the spinach and tomatoes and cook for a few minutes.
