Arugula Skirt Steak Salad
A salad of arugula steak and red onion.
24 oz baby arugula
1 cup red onion, slices
12 grape tomatoes
6 tbsps olive oil
1 tbsp balsamic vinegar
1 tsp unpacked brown sugar
2 tbsps red wine vinegar
2 oz feta cheese
16 oz beef inside skirt steak (lean only, trimmed to 1/4" fat)
Cook onion in balsamic and brown sugar set aside.
Heat 1 tablespoon olive oil and heat steak seasoned with pepper and salt.
Prepare arugula and tomatoes.
Mix red wine vinegar and olive oil for dressing.
Toss all of ingredients together.
