Black Bean Burgers
Yummy vegetarian black bean burgers.
15 oz black beans
2 carrots, grated
1/2 large onion, chopped
1 <span class="measurestring" title="potato medium (2-1/4" to 3-1/4" dia)">medium</span> russet potato, peeled, shredded
1 cup corn
2 jumbo eggs
1 cup bread crumbs
1 dash pepper
2 tbsps vegetable oil
Mash black beans with a fork in a large bowl.
Mix carrots, onion, potato, corn and bread crumbs into the mashed beans.
Stir eggs into bean mixture to integrate completely.
Form the mixture into 8 patties with wet hands, season with salt and black pepper.
Heat vegetable oil in a skillet over medium heat. Cook the patties in hot oil until cooked through, about 6 minutes per side.
