ELT - Egg Lettuce & Tomato Sandwich
A light, tasty, vegetarian sandwich that has no cholesterol.
2 slices whole wheat bread
3 tbsps egg substitute
1 tsp vegetable oil spread
1 medium lettuce leaf
1 medium tomato slice
Toast the whole wheat bread.
Meanwhile, heat 1 tsp vegetable oil spread in a small frying pan. When hot, add egg substitute.
Gently saute the egg substitute until it forms an omelette. Remove from the heat.
Layer the lettuce, omelette, and tomato on 1 piece of toast. Top with the remaining toast, slice, and enjoy.
