Green Eggs and Ham
An easy breakfast bake when you have company.
3 large eggs
10 g flour (1 tbsp)
2 tbsps butter
1 <span class="measurestring" title="cup (not packed)">cup</span> low fat cottage cheese
1 1/2 cups shredded cheddar cheese
0.12 tsp hot pepper sauce
1 cup spinach
12 slices 1 nlea serving lean ham
Pre-heat oven to 350 °F (175 °C).
Combine flour, butter, cottage cheese, cheddar cheese, and hot sauce in a food processor or blender.
Add spinach and pulse briefly. You should be able to see small chunks of spinach in mixture.
Line muffin tin with ham slices (1 per muffin cup).
Pour 1/3 cup egg mixture into each muffin cup.
Bake for 20 to 25 minutes or until toothpick comes out clean.
