Mini Meat Loaves
Cooking meatloaf in small portions cuts cooking time and keeps meat juicy.
4 1/2 tsps dijon mustard
1 large egg, lightly beaten
1/2 tsp ground oregano
0.12 tsp black pepper
1/2 tsp salt
3/4 cup onion, finely chopped
1/2 cup low sodium ketchup
1/4 cup seasoned breadcrumbs
1 lb lean ground beef
Preheat oven at 400 °F (205 °C).
Combine ketchup and mustard, stir with a whisk. Reserve 2 1/2 tbsps of ketchup mixture.
Combine remaining ketchup mixture, beef and the remaining ingredients in a large bowl, stirring to combine.
Divide beef into six equal portions and put in a 6 piece muffin pan coat lightly with cooking spray.
Spread the reserved ketchup mixture evenly into the meatloaves.
Bake for 25 minutes or until done.
