Rare Roast Beef Salad with Mustard Mayonnaise
A yummy salad for Phase 1 of the South Beach diet.
1/3 cup olive oil
1/4 cup lemon juice
2 tbsps chopped chives
1 tbsp drained capers
1/4 cup mayonnaise
1 tsp or 1 packet dijon mustard
2/3 tbsp worcestershire sauce
3 lbs rare roast beef
6 oz cherry tomatoes
2 cups shredded radicchio
2 cups shredded or chopped lamb’s lettuce
8 oz artichoke hearts
1/3 cup chopped or diced cornichons
1 dash salt
1 dash pepper
Combine olive oil, lemon juice, chives, capers, salt, and pepper in a small bowl. Whisk together until well blended.
Combine mayonnaise, Dijon mustard, and Worcestershire sauce in a small bowl. Stir until well blended.
Divide the remaining ingredients among 6 serving plates.
Spoon the dressing over and place a tablespoon of mayonnaise in the center of each salad.
