||In large frying pan, sauté spinach in olive oil. Spread spinach evenly over the pan.
||Mix cream and eggs. (You can substitute milk for cream).
||Pour egg mixture over spinach.
||Cook over low heat until eggs are firm, or cook in the oven.
||After eggs are firm, flip the eggs and spinach 'crust' over in the frying pan.
||Add tomatoes and feta cheese.
||Cover frying pan over low heat until tomatoes and cheese are warm. Cut into four slices and serve.
||Note: for variety use salsa and shredded cheddar instead of tomatoes and feta.
