Tomato & Cucumber Italian Salad
Like a bruschetta topping without the bread.
5 medium roma tomatoes
4 tsps oregano leaves
7 leaves basil
1 <span class="measurestring" title="large (8-1/4" long)">large</span> cucumber, peeled
2 cloves garlic
1 tbsp parsley
2 tsps salt
1 tsp black pepper
1 tbsp extra virgin olive oil
1 tbsp balsamic reduction
Chop tomatoes into cm square pieces.
Peel and chop cucumber into chunks a little smaller than an inch (chop into 4 strips lengthwise and then into chunks).
Mince herbs. Mince garlic and parsley very fine.
Add altogether with balsamic reduction, olive oil and spices.
