Yogurt Blueberry Muffins
Super easy mini blueberry muffins using pancake mix and yogurt.
6 oz light strawberry & banana yogurt
1/4 cup cane sugar
1 cup blueberries
1 tsp baking powder
2 cups whole grain buttermilk pancake & waffle mix
1/4 cup liquid egg whites
Preheat oven to 400 °F (205 °C). Spray mini muffin pan with baking spray.
Mix together all dry ingredients in a bowl.
Mix in wet ingredients except for blueberries.
Gently fold in blueberries.
Spoon 1 rounded tablespoon of mixture into each cup of the muffin pan.
Bake 8-10 minutes or when a toothpick comes out clean and top is golden. If using a standard muffin pan, bake 18-20 minutes.
