Almond Coconut Cookies

5.6 oz unsweetened shredded coconut
1/2 cup almond flour
1/2 cup liquid egg whites
2.8 oz stevia
1/2 tsp pure almond extract
1 dash salt
1 tsp vanilla extract
Preheat oven to 350 °F (165 °C).
Mix all ingredients.
Use 1 tablespoon measure to put rounded dough on covered with parchment paper cookie sheet.
Bake 18 minutes (makes 18 cookies).
