Beef with Black Bean Sauce
Black bean sauce provides a delicious Asian flavor for this dish which is great with beef, lamb or chicken
1 tsp sesame oil
1 tsp oil
1/4 <span class="measurestring" title="cup (8 fl oz)">cup</span> chicken stock
4 cloves garlic, crushed
2 tsps ginger, grated
3 large spring onions, chopped
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green pepper, sliced
1/2 cup slices water chestnuts
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> sweet red pepper, sliced
2 lbs sirloin steak, strips
1 tbsp black beans, rinsed and chopped
2 tbsps soy sauce
2 tsps ketchup manis
1 tsp sugar
1/2 oz corn flour (3 tsp)
1 fl oz rice wine
Marinate the beef strips for 1 hour in 1 tbsp soy sauce, 2 tsp rice wine, 1/2 tsp sesame oil and 1 tsp cornflour.
Heat 2 tablespoons of oil to almost smoking in a wok.
Add the beef and brown – remove. Add another tablespoon of oil to wok and heat.
Stir fry the spring onion, garlic, black beans and ginger for 20 seconds.
Add the peppers and water chestnuts and stir fry another minute.
Combine the remaining soy, wine, cornflour and sesame oil and ketcup manis, sugar and stockand simmer until thickened.
Add the beef and toss lightly in the sauce until cooked through.
