Cheese & Vegetable Frittata
A low carb style frittata full of veggies.
1/2 cup chopped carrots
2 jumbo eggs
1 cup cream
1/3 cup green string beans
1/4 cup chopped onion
1 cup cauliflower
1 cup spinach
1 dash salt
1 dash pepper
1 oz peppers
3/4 cup shredded cheddar cheese
1/4 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
In an ovenproof pyrex dish, steam the washed spinach, and other vegetables for about 5 minutes, just to soften a little.
In a separate mixing bowl, beat the eggs with the cream and water. Add the grated cheese, salt and pepper, mix well.
Mix the vegetables around in the pyrex dish. Leave to cool a little before pouring the liquids in.
Sprinkle with a little cheese and bake for about 35 minutes in a 375 °F (190 °C).
Serve with baby spinach or leafy greens. Delish!
