Chicken with Watermelon Salsa
Grilled chicken with a refreshing fruity salsa that's great for the summer.
2 tsps canola oil
4 breasts, bone and skin removed chicken breasts
1 wedge yields fresh lime juice
2 limes yield lime juice
2 cups diced watermelon
3 cups cilantro
1 tbsp chopped red onion
1/2 <span class="measurestring" title="pepper, large (3-3/4" long, 3" dia)">large</span> yellow bell pepper
To prepare chicken, in cup or small bowl combine oil and 1 teaspoon of fresh lime juice; brush chicken breasts with oil mixture.
Grill or broil chicken until cooked through and juices run clear.
Meanwhile, in medium bowl combine salsa ingredients (watermelon, yellow bell pepper, cilantro, 2 tablespoons fresh lime juice and red onion), mixing well.
Place 1 cooked chicken breast on each plate; top each with 1/4 of the salsa.
