Garlic Lentil Soup

Directions
  1. Chop the carrot, onion and garlic quite small and add to a big soup pan.
  2. Add all the other ingredients except the vinegar and pepper.
  3. Bring to a boil for about ten minutes and then let simmer for about 80 - 90 minutes, stirring occasionally but more often towards the end.
  4. Turn off the heat and stir in the red wine vinegar and season with pepper. I find it doesn't need salt thanks to the tasty stock but feel free to add a pinch.
  5. Serve hot.
