Garlic Lentil Soup
Warm, hearty soup with terrific flavors.
2 tbsp red wine vinegar
1 bay leaf
1 tsp leaves oregano
1 dash pepper
6 <span class="measurestring" title="cup (8 fl oz)">cups</span> vegetable stock
1 medium carrot
3 cloves garlic
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion
1 cup lentils
Chop the carrot, onion and garlic quite small and add to a big soup pan.
Add all the other ingredients except the vinegar and pepper.
Bring to a boil for about ten minutes and then let simmer for about 80 - 90 minutes, stirring occasionally but more often towards the end.
Turn off the heat and stir in the red wine vinegar and season with pepper. I find it doesn't need salt thanks to the tasty stock but feel free to add a pinch.
