Good for You Fried Chicken
Fried chicken you don't have to feel guilty about.
6 oz boneless skinless chicken breast
5 round melba snacks
2 tsps olive oil
Cut the chicken breast into bite sized pieces and do not dry after cutting. The juices from the chicken will be used to hold the breading.
Crush the Melba into a breading consistency in the blender.
Put the Melba crumbs in a Ziploc bag and add half of the chicken.
Seal the bag and shake to evenly coat all chicken pieces.
Heat the olive oil in a medium-sized skillet and add the coated chicken.
Add the other half of the chicken to the Ziploc bag and coat it the same way.
Cook all of the chicken until it is done all the way through.
