Chocolate Peanut Butter Muffins
This is a tasty, gluten free muffin recipe.
3/4 cup peanut butter
1/2 cup large chocolate chips
1/2 cup coconut oil
4 large eggs
1/2 tsp baking soda
1/2 cup cocoa
1/2 cup honey
Preheat oven to 350 °F (175 °C).
Melt together honey and coconut oil by placing in microwave together for 20 seconds and whisk.
Whisk in cocoa powder and peanut butter until smooth.
Whisk in eggs and baking soda.
Pour into muffin tin, lined or greased.
Bake for 18-22 minutes until done.
Note: butter can be used instead of coconut oil.
