Raisin Bran Muffins
High fiber raisin bran muffins, great to freeze and eat every morning.

  1. Pre-heat oven to 400 °F (200 °C).
  2. Mix together the all-purpose flour, baking powder, cinnamon and salt.
  3. Pour milk over raisin bran, let stand to get soft (5-8 minutes), stir in eggs, honey and butter.
  4. Add dry ingredients and stir until well mixed (about 2 minutes with electric mixer on medium.)
  5. Spoon batter into muffin cups, makes about 18.
  6. Bake for 18-20 minutes or until golden brown.
