Sweet Red Cabbage
An easy and delicious low calorie side dish.
1 tbsp balsamic vinegar
2 tbsps olive oil
1 small red cabbage
1/2 tsp pepper
1/2 tsp salt
0.12 fl oz lemon juice
1/2 cup raisins
1/3 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
Cut the cabbage in half and remove the stem. Slice cabbage very thinly.
Put cabbage into a large pot with the balsamic vinegar, olive oil, raisins and water Stir to coat cabbage.
Cover the pot and cook over medium heat until tender, about 15 minutes. Stir occasionally.
Add lemon juice, salt and pepper to taste.
