Black Bean Soup
A quick and very filling soup that doubles as a meal.
1 tsp ground coriander
1/4 tsp cayenne pepper
1 tbsp balsamic vinegar
1 tbsp olive oil
8 cups chicken broth, low sodium
1/4 cup chopped celery
3 tsps minced garlic
1/2 cup chopped onion
2 cups black beans, cooked and drained
Cook onion, celery and garlic in olive oil over medium-high heat until soft.
Add chicken broth, black beans, coriander and cayenne pepper. Simmer uncovered, about 10 minutes.
Stir in balsamic vinegar.
Serve warm and garnish with cilantro.
Note: optional to take soup (when cooled) and transfer to blender and process to smooth consistency. Serve warmed.
